Ingredients
4 slices rustic or baguette bread
2 ripe tomatoes
1 garlic clove (optional)
2 tablespoons olive oil
Salt to taste
Black pepper (optional)
For Dressing
1 tablespoon extra-virgin olive oil
A pinch of sea salt
Chopped fresh basil or parsley (optional)
A few drops of lemon juice (optional)
Direction
Toast the bread slices until golden and crispy.
Lightly rub the toasted bread with a peeled garlic clove for added flavor.
Cut the tomatoes in half and grate or mash them into a fresh pulp.
Spread the tomato mixture evenly over the toasted bread.
Drizzle olive oil on top and sprinkle with salt and pepper.
Add herbs or a little lemon juice if desired and serve immediately.
