Ingredients
500 g beef chuck or short ribs
8–10 corn tortillas
3 dried guajillo chilies
2 dried ancho chilies
1 onion (chopped)
4 garlic cloves
1 tsp cumin
1 tsp oregano
2 cups beef broth
Salt and black pepper to taste
1 cup shredded Oaxaca or mozzarella cheese
For Dressing
½ cup finely chopped onion
¼ cup fresh cilantro
Lime wedges
Small bowl of consommé (birria broth)
Optional hot sauce or sliced jalapeños
Directions
Toast the dried chilies lightly and soak them in warm water for about 10 minutes.
Blend the soaked chilies with garlic, onion, spices, and some broth until smooth.
Cook the beef with the chili sauce and remaining broth for 2–3 hours until tender.
Shred the cooked meat and keep the broth for dipping.
Dip tortillas in the broth, add meat and cheese, and fry in a skillet until crispy.
Serve hot with onion, cilantro, lime, and the broth for dipping.
