Birria Tacos: A Flavourful Mexican Street Food You Must Try

Ingredients

  • 500 g beef chuck or short ribs

  • 8–10 corn tortillas

  • 3 dried guajillo chilies

  • 2 dried ancho chilies

  • 1 onion (chopped)

  • 4 garlic cloves

  • 1 tsp cumin

  • 1 tsp oregano

  • 2 cups beef broth

  • Salt and black pepper to taste

  • 1 cup shredded Oaxaca or mozzarella cheese

For Dressing

  • ½ cup finely chopped onion

  • ¼ cup fresh cilantro

  • Lime wedges

  • Small bowl of consommé (birria broth)

  • Optional hot sauce or sliced jalapeños

Directions

  • Toast the dried chilies lightly and soak them in warm water for about 10 minutes.

  • Blend the soaked chilies with garlic, onion, spices, and some broth until smooth.

  • Cook the beef with the chili sauce and remaining broth for 2–3 hours until tender.

  • Shred the cooked meat and keep the broth for dipping.

  • Dip tortillas in the broth, add meat and cheese, and fry in a skillet until crispy.

  • Serve hot with onion, cilantro, lime, and the broth for dipping.
